Our most popular sharpening method. The Hamaguri grind is a thinner and much sharper grind compared to the V-grind!

The convex edge makes the knife cut with less resistance but also keeps its sharpness longer as the thinner geometry itself is sharper by nature.

Only Shinogi offers this type of sharpening in Sweden today and the process is a 5-step process where we first set the grind on the knife, then we do a slight thinning of the blade before blending the grind facets into a soft, convex shape. The next step is to give the blade a fine finish before we polish the knife edge to its maximum sharpness!

This sharpening is best suited for Japanese factory-made chef's knives such as Global, MAC, etc.
