Takeshi Saji is one of the few blacksmiths in Japan to have been awarded the title “Dento Kogeshi” — an honor bestowed by the Japanese government upon the nation’s most highly skilled craftsmen.
His craftsmanship is nothing short of pure art. We had the privilege of receiving one of his blades and we have ground it to our own preferences.
The result is a knife significantly thinner than the original, paired with a custom handle that creates a striking contrast against the dark etching of the blade.

Please note: Avoid cutting hard ingredients such as frozen foods, bones, or crusty bread. The steel is hard and thin, which makes it delicate and prone to chipping if used improperly.
