What does "Shinogi" mean?
"Shinogi" refers to the edge of a traditional Japanese knife that is single-edged and distinguishes hira from kireha. You have four main parts on the Japanese blade. "Hira" is the flat part on the front and "kireha" is the part you sharpen.
On the other side you have Uran which is concave. It consists of Urasuki which is the concave part and Uraoshi which is the edge that touches the stone when sharpening.
Two other important concepts are "Hagane" which is the hard, cutting steel of a knife, and "Jigane" which is the soft, protective steel of the knife.
For us, the passion for knife sharpening began with the Japanese single-edged yanagiba knife. Sharpening a regular knife is easy, but sharpening a yanagiba requires practice, patience, skill and knowledge. It was that challenge that sparked the passion for advanced knife sharpening. To not only make a knife sharp, but also beautiful in the process.
The journey of Shinogi began with founder Erik Mases, who began training in knife sharpening in 2019 using a machine sharpener. There was an immediate passion for the craft and soon after he began learning stone sharpening. He studied the techniques the masters used, practiced and challenged himself to improve. Inspired by the skilled knife restorations he witnessed, he bought a few rusty Japanese knives and with each knife he completed, Erik found ways to make it better.
Four years later, as a full-time knife sharpener with thousands of hours in the profession and hundreds of thousands of sharpened knives, Erik felt the need to start his own business.
A knife sharpening company that shares his values and strives for perfection instead of "just" sharp. With room to find new ways to improve their craft even further.
